Foodie Friday: Easy Cheddar Chicken Tacos


I don't know if I shared this with yall, but my oldest son should win the Pickiest Eater Award!  In an attempt to give him something he likes without slaving in the kitchen too long, I grabbed 3 chicken tenders and diced them, seasoned them with ground cumin, sea salt, onion and garlic powder.  Fried it in a little olive oil until cooked.  A great way to check if the chicken is cooked, is by trying to slice it with your cooking spoon.  If it is still pink, then it needs more time, if it is white and tender of course you know that it is ready.

 I knew I couldn't go wrong, with the tortillas which I preheated before I added the cooked chicken and cheese.
 I rolled them, seam down, and placed them in a 350 degree oven for a few minutes until the cheese was melted.  I seriously thought this was gonna be a #fail.  I cut each taco into 3's and gave them to both of my sons.  The little one went in on those tacos like there was no tomorrow.  But, the older one looked them over and then had the nerve to ask me what it was.  I was sure he wasn't going to eat it!  His answer to this is always, "I don't like it" and I always ask, "How do you know you don't like it if you don't try it?"

But, he actually took a bite and finished what I gave him and even asked for more!
He is safe for today!  Just kidding!

Foodie Friday: Baked French Toast

 I whisked 1 egg, 1 cup of milk, and 1/8 cup of brown sugar together.
 Preheat oven to 425 degrees Farenheit with pan inside.  1-2 tbsp of butter until melted completely in pan.
 This part is tricky!
 Soak your bread on both sides, but not for too long because it will fall apart!
 Place in cookie sheet and bake for ten minutes on each side.
These tasted better than I thought they would!  I added syrup and they tasted almost like waffles!  I also sprinkled Cinnamon for extra flavor on both sides before I placed them in the oven.

Foodie Friday: Stuffed Porkshops

I picked up these chops for .99 cents a pound today and thought I would attempt to make stuffed pork chops.  

 I looked up all sorts of recipes, but I didn't have all of the ingredients, so I whipped up my own stuffing instead!
 I used about a cup of diced red onion, chopped bacon, 2 cloves of garlic and some Kraft cheese for the stuffing.
 I seasoned my chops after I butterflied them with Sea Salt, Onion Powder, and Garlic Powder.

 Stuffed and ready to go in the oven for 20 minutes at 400 degrees Farenheit.
I left them a little longer by accident!  But they tasted fine.  The only thing I would try next time would be to add some fresh Sage or Rosemary to the stuffing.
